While training me for the first time on a lees filter,
Val Pierce described the waste from the filter as "cookies"
"Yeah, don't they look like giant Lorna Doone's?" she would exclaim.

She showed me to examine and rate the cookies like "a physician would examine stool.
You want them just the right consistancy: not too hard, not too soft, but firm!"

Pictured here are cookies that ended up slightly loose. Could have used just slightly
higher rate of perlite to lees, but this filtration went fairly flawless.
These are "happy" cookies.
